When I went to the farmer’s market a couple of weekends ago, I was in search of fresh and delicious fruit. The best fruit on display for many of the vendors were peaches. So, for this week it’s all about that delicious fruit. For this recipe, I’m making a peach crisp.
The recipe is easy to prepare. The only part that really requires work is peeling and slicing the peaches. (For peeling the peaches, I find it easiest to set the peaches in boiling water for a few minutes and then immediately put them into an ice bath. Then, the skin comes off pretty quickly. You can also just peel them, but I find that is a bit harder to do.) I hope that you enjoy this easy Fresh Peach Crisp recipe as much as I did!
Easy Fresh Peach Crisp Recipe with Oats
Yield: 6 – 8 servings
Ingredients
- 3 – 4 lbs. fresh peaches
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 tsp salt
- 1/8 tsp nutmeg
- 1/8 tsp ginger
- 3/4 tsp cinnamon
- 3/4 cup old fashioned oats
- 1/2 cup cold unsalted butter (1 stick) – cut into cubes
Directions
- Pre-heat the oven to 375 degrees. Butter a 9 x 13 baking dish and set it aside.
- Bring a large pot of water to a boil and place the peaches in the pot for about 3 – 5 minutes. When the skin on the peaches begin to blister, remove them from the pot and place them into an ice bath for approximately two minutes to stop the cooking process. Peel the peaches and slice them approximately ½ inch thick. Place the peaches in the buttered dish and prepare the remaining ingredients.
- Whisk the flour, sugars, salt, nutmeg, ginger, and cinnamon together in a medium bowl. Mix in the oats. Using two knives (or a pastry blender) cut in/combine the butter until the mixture looks like coarse crumbs. Pour the topping over the peaches and bake it in the oven for 35 – 45 minutes. (The top will be golden brown.)
Recipe Notes:
– Serve this dessert warm.
– Ice cream or whipped cream goes wonderfully with this dish.
-As an option, you can prepare individual peach crisps in ramekins.
