There has been a muffin dilemma in the Coleman household this year. Michael and I like banana muffins but Reggie and Sean like apple muffins. I recently made an easy apple cinnamon muffins recipe that we all enjoy.
The “secret” is the addition of applesauce. I really like that this apple cinnamon muffin recipe includes fresh apples and applesauce. While you can use plain or any other fruit-flavored applesauce, I use cinnamon applesauce because that is the flavor that everyone in my home likes.
Apple Cinnamon Muffins With Applesauce
Awesome Applesauce Apple Muffins Recipe
Yield: 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 ½ cups brown sugar
- ¾ tsp ground cinnamon
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla
- 1/2 cup applesauce
- 2 medium apples, peeled, cored and chopped
Directions:
1. Preheat the oven to 400 degrees Fahrenheit. Butter a 12 cup muffin pan (or use cupcake liners).
2. In a large bowl, mix the flour, baking powder, baking soda, salt, brown sugar and cinnamon.
3. In a medium bowl, whisk together the milk, vegetable oil, egg and vanilla. When they are well mixed, add them to the large bowl and stir everything together.
4. Add the applesauce to the large bowl until it is well mixed. Then, stir in the apples.
5. Scoop the mixture into the muffin pan. Place the pan into the preheated oven and let the muffins cook for 25 minutes. (A knife or toothpick inserted into the middle of the muffin should come out clean.)
Variations:
-You can use whatever flavored applesauce your family prefers.
-Even though I prefer not to do so, you can also add a crumb topping if you like.
