During the summer, I don’t like to eat a lot during the hottest parts of the day. Light breakfasts and lunches are ideal. That is why smoothies are my “go to” summer breakfasts. I will probably be trying a variety of smoothie recipes throughout the course of the summer, but the spinach recipe below is my current favorite. Don’t let the green appearance push you away. It’s actually really good…even Sean enjoys it!
Anyway, I like to drink the smoothie and eat a bit of leftover protein (i.e. chicken) from the night before along with it. If there are no leftovers, then I just add a scoop of whey protein powder to the smoothie. It’s not my favorite, but it will do in a pinch so that I have a “complete” meal.
Spinach Smoothie
Yield: 1 -2 servings
Ingredients
- 1 cup of baby spinach
- 1 cup of orange juice
- 1 cup of ice
Directions
1. Place the spinach, ice and orange juice into the blender.
2. Put the top on the blender and mix the ingredients together for 10 – 15 seconds/until it reaches your desired consistency.
3. Pour the mixture in a cup and enjoy!
