Uncle Ben’s ‘Simplify Your Life’ Contest ($100 value)

Uncle Ben’s is introducing two new Ready Rice varieties, Jasmine and Basmati this June. I love Indian and Thai food, so I previewed the products. You just pop them in the microwave for 90 seconds and that’s it. Honestly, I was only able to taste a bit of each because my husband and sons gobbled them up first. (I’m the “potato” girl from the South, but all of my guys prefer rice.)

The fun part: Mom in the City has been chosen to be one of ten sites involved in Uncle Ben’s ‘Simplify Your Life’ contest. I cook meat one day a week and use it in dishes for the rest of the week. If I cook chicken, we may have chicken salad, chicken enchiladas, and chicken stew the rest of the week.
I like to cook a large pot of chicken stew with veggies over the weekend. I make many small portions and freeze for the following weeks. You can easily drag one out and microwave it for a quick meal
My staples for being able to make quick, healthy meals: cooked chicken in fridge which I do on Sunday; pesto ice cubes; low sodium tomato and bell pepper soup in fridge–great for sauces and quick soup.

I am a very poor cook and this product would make life easier for me.
I hate cutting onions, so I do a bunch of onions and bag them for the week.
I make a weekly menu with my grocery ads and coupons and never shop without them!
I definitely try to do most of my week’s cooking on Sunday, and I try to make dishes that freeze well so I can take them to school for lunch and have them for dinner during the week. Like many others, I’ve also bought a crock pot and pressure cooker to save myself time and hassle for making dinner each night. i cook uncle ben’s rice in chicken or beef broth for extra flavor. I cook twice as much at one time, so i can use the extras in meals for later.
I try and plan double duty entrees, that can be used again later in the week for a different – quick fix meal. Like I will make crock pot carnitas, and the leftovers will get a hefty dose of BBQ sauce and be pulled pork sandwiches on the weekend.
I like brown rice, but it takes longer to cook. So when I do cook rice, I cook extra and freeze some for later use.
I always make chili or spaghetti or casseroles in a larger quantity than I need. Then I freeze them in those reusable Glad containers and they make snappy meals for myself or the kids at a moment’s notice!
I try to get everything prepped on my day off so i don’t have to do it after work.
I live alone, so there aren’t many recipes that DON’T leave a ton of leftovers. Rather than eating the same meal for a whole week, I freeze individual portions and then I can take it out a few days or weeks later and leave it in the fridge overnight to defrost for me to either take to work for lunch or have for an easy dinner.
I immediately prep food from the grocery store – wash and re-bag veggies, re-package meats, put snacks in the snack container etc. I freeze what I won’t use right away and put the rest in the fridge.
It really makes meal preparation easier and I can plan better for the week

Plan your meals for a week, saves shopping time and you can plan “cook once, eat twice” meals.
If I know I have a busy evening (after school activities, errands etc.) I will make dinner earlier in the day and just re-heat it at dinner time. It leaves me less stressed out and I can go from being out to enjoy a home cooked dinner in no time at all!
I often cook up lots of one meat – like boiled chicken – then freeze into parcel sized to use throughout the week in various dishes. We have rice two or three times a week – alwayz Uncle Ben’s.
I Get everything at the store for 2 wks worth of meals at a time.
Before I go grocery shopping I plan out what we are going to eat for dinner so I know what food to get and what we already have.
I always prepare a grocery list using the sale paper as a guideline, and set aside my coupons for the items that are already on sale.
Once a week, we have good ol’ leftover night, and every so often we have a night called “everybody for themselves”, where we all make a sandwich, open soup, eat cereal, whatever each person feels like.
I like to grow my own vegetables so it saves money and I always have the vegetables I need to cook dinner on hand.
I simplify (and save money) by making extra dinner and having it as leftovers for lunch the next day
Grill in the summer. Seems quicker and less cleanup. Can still cook rice in the kitchen.
I prepare large meals on weekends and freeze them to have on hand for the week so I don’t have to do a full cooking every night. This helps me and gives me more free time during the busy week.
We do all the prep work for dishes that are to be cooked weekdays on the weekend.

Since both my husband and I enjoy cooking BUT only on our terms and as a creative and leisurely activity. We usually usually roast or grill several Chickens and some kind of pork, beef or lamb roast on Sundays and then we have the meat ready for soups, salads, casseroles, stews all week.
“Prepared” and packaged rice, grains and pasta, like Uncle Ben’s Ready Rice are a godsend when it comes to making delicious meals in moments!
P.S. We’ve tried both the new Jasmine and Basamti rices and they are both delicious and endlessly versatile.
At the beginning of the week, I check over all of the grocery fliers and plan my meals according to what is on sale. i always shop with a list and lots of coupons.
I find that if I stick to my list and get what is on it I spend less money also use coupons for you would normally buy,.
When we cook our rice we rinse it in cold water first, this seems to make it less “sticky and clumpy” when cooked.
I freeze most of my meat and vegetables already cut up and ready to go straight into the pan. I fill out a blank calendar with a menu for a whole month so I know what I am going to make every night at a glance and also for grocery shopping
