Last night, I needed a quick side to go with the chopped cheese sandwiches that I made for dinner. Since I had a couple of potatoes, I made some air fryer diced potatoes. They were easy to make and came out crispy and flavorful.
I simply chopped up the potatoes before drizzling them with olive oil. Then, I sprinkled the potatoes with salt, pepper and paprika before placing them in the air fryer. It only took twenty minutes to cook diced potatoes in the air fryer.

Air Fryer Diced Potatoes
Air Fryer Diced Potatoes
Serves: 3-4
Ingredients:
- 2 medium russet potatoes, peeled and cubed
- 1 tbsp extra-virgin olive oil
- 1/2 tsp paprika
- Salt and black pepper, to taste
Directions:
1. Lightly spray the fryer with your favorite oil and preheat the fryer to 400 degrees Fahrenheit for 5 minutes.
2. Drizzle the oil over the potatoes and toss to make sure that all sides are coated before sprinkling the seasonings on them.
3. Place the potatoes in the preheated air fryer basket.
4. Cook the potatoes for 20 minutes at 400 degrees. (Shake the basket and turn the potatoes over at the 10-minute mark.)
5. Remove the potato cubes from the air fryer and serve them.
Recipe Notes
*Some people like to soak their peeled potatoes in water before frying them for added crispiness and in order to prevent them from sticking together. If you choose to do this, just be sure to air dry the potatoes on paper towels before putting them into the air fryer. (I don’t do this and my air fryer potato cubes are crispy and don’t stick together.)
*This basic recipe is versatile. This past summer, I added 3 cloves of minced garlic and rosemary to the potatoes. I was out of parsley or I would have added that too. (I left the paprika out though.)
