During my family’s move last month, several friends volunteered to bring us meals so that we wouldn’t have to think about cooking. I’m glad that I resisted my initial urge to decline their offers because we ended up with some great meals. I also learned a couple of new recipes in the process – including one that I altered to make an air fryer salmon patties without flour recipe.
My friend Judy brought over a container of salmon cakes. They were so delicious that “my guys” gobbled them down. I was barely able to get any for myself! Once I settled into my new home, I asked Judy for the recipe so that I could make it and share it with you.
Judy was kind enough to agree. She said that she had altered a recipe from Natasha’s Kitchen. She left out the mayo, added a variety of peppers and Old Bay seasoning, used canned salmon and made a couple of more tweaks.
Then, it was time for me to “play” in my kitchen. I took Judy’s altered recipe and made a few changes in order to make some air fryer salmon patties. I know that they were tasty because when I went to get another one, they were all gone. (One of my teen sons had eaten three of them as an “after-school snack”.) I think that your family will enjoy them too.
Air Fryer Salmon Patties Recipe
Judy’s Salmon Patties
Serves 3
Ingredients:
- (2) 6-ounce cans salmon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/8 tsp Old Bay seasoning
- 1 tbsp olive oil (plus additional oil for spritzing the patties)
- 1/2 cup onion, finely diced
- 1/2 cup bell peppers (red,green, yellow & orange), diced
- 2 cloves garlic, chopped
- 1 cup Panko Japanese Style bread crumbs
- 2 large eggs, lightly beaten
- 1 tsp Worcestershire sauce
- 1/4 cup fresh parsley, minced
Directions:
1. Lightly spray the fryer with your favorite oil and preheat the fryer to 400 degrees Fahrenheit for 5 minutes.
2. In a medium skillet, sauté the onion and peppers in olive oil over medium heat for 5 minutes. Add the garlic and heat for an additional 2 minutes.
3. In a large bowl, combine the salmon, sautéed vegetables, bread crumbs, eggs, Worcestershire sauce, parsley, salt, pepper and Old Bay seasoning.
4. Once everything is stirred together, form 7-8 patties. I use a 1/4 cup scoop to portion the mixture before pressing them into pattie shapes.
5. Lightly spritz the top of the patties with olive oil before placing them in the air fryer so that the patties will get crisp. (I use my Misto Tritan oil sprayer to do this.)
6. Air fry the patties for 10 minutes. Use a spatula to flip them over. Spritz the top of the patties and let them air fry for an additional 10 minutes before removing them.
Recipe Notes
*When available, I like to use sustainably caught salmon like Wild Planet’s Wild Alaska Pink Salmon.
*Depending on the size of your air fryer, you might need to make this dish in batches. I was able to cook 6 patties at a time in my MOOSOO air fryer.
