Normally, I buy frozen roasting sweet potatoes but I forgot to order them last week. Fortunately, I had a bag of fresh sweet potatoes so I made some air fryer sweet potato cubes to go with a rib and broccoli meal this week. The side was simple to make and the cubes came out nice and crispy.
Similar to the air fryer diced potatoes that I made with russet potatoes, I chopped up the potatoes before drizzling them with olive oil. (There is no need to soak the sweet potatoes in water before cooking them.)
I sprinkled the potatoes with salt, pepper, paprika and garlic powder before placing them in the air fryer. It took thirty minutes to cook the air fryer sweet potato cubes.

Air Fryer Sweet Potato Cubes
Air Fryer Sweet Potatoes
Serves: 3-4
Ingredients:
- 2 medium sweet potatoes, peeled and cubed
- 1 tbsp extra-virgin olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Sea salt to taste
- Coarsely ground black pepper to taste
Directions:
1. Lightly spray the fryer with your favorite oil and preheat the fryer to 400 degrees Fahrenheit for 5 minutes.
2. Drizzle the oil over the potatoes and toss to make sure that all sides are coated before sprinkling the seasonings on them.
3. Place the potatoes in the preheated air fryer basket.
4. Cook the potatoes for 30 minutes at 400 degrees. (Shake the basket and turn the potatoes over at the 15-minute mark.)
5. Remove the potato cubes from the air fryer and serve them.
Notes
*This basic recipe is versatile. You can make the potatoes savory as I did. As an alternative, you can also make a sweeter version by tossing the potatoes with cinnamon and a bit of brown sugar.
*If you don’t have an air fryer, I recommend Pictsweet Farms Vegetables for Roasting Sweet Potatoes. When I don’t feel like peeling and chopping sweet potatoes, this is the frozen brand that I use. (I love that “sweet potatoes” are the only ingredients.)
*You can feel great about making sweet potatoes for your family. They are a good source of Vitamin A and are loaded with beta carotene. During these times, we can definitely use all of the immunity support that we can get.
