Watermelon Feta Salad Recipe

Sometimes the best foods are the ones that are the simplest to prepare. For the summer, I tend to stick with lighter fare like smoothies, salads and chilled soups since they (generally) require less preparation. Although they are easy to … Read More

Four Time Management Tips

Last month, I was over at a friend’s home and we started talking about our schedules.  We both are moms who work from home and have very full lives.  My friend asked me how I make my schedule work and I shared a few things that work for me the majority of time. We are all busy so I thought that perhaps these four pointers might help you too…

  1. Schedule your time according to your priorities.  Personally, I schedule out my months, then my weeks and then my days.  Many of us work for pay (either part-time or full-time), so those hours are automatically taken from our weeks.  It’s the other hours that I’m talking about.  We all only get 168 hours a week, so it’s important to be mindful of how we use them.  My personal priorities are God, my husband, my kids and then everything else. So, for my non-work hours, I schedule in daily devotionals, time with my husband, time with my kids and some sort of physical exercise on a daily basis.  Then, everything else gets in where it fits in. 🙂

Team Paper Calendar (and a Blue Sky Home Series giveaway)

A few days ago the New York Times ran an interesting story called A Paper Calendar? It’s 2011. It was about preferences between paper and electronic calendars. Although it is 2011, I still fall squarely in the paper calendar camp! That is why I was happy to review and give away a set of samples from the Blue Sky Home Series. (The review actually worked out quite well for me since my current paper calendar runs out at the end of August – one of the “cons” of paper calendars.)

I received a variety of paper goods  in my sample pack.  My favorite was the Weekly/Monthly Planner. There was also a Multi-task Mouse Pad, Grocery Checklist Pad and a “Don’t Forget To” Door Notes included with the package.  Honestly, I like to keep everything in one central place (the planner), so I haven’t really used the other samples.  Actually, that’s not true.  I used the “Don’t Forget To” Door Note once. I stuck it on my bedroom door for Michael.  It said:

Mild Mango Peach Salsa Recipe

Recently, my friends at TheMotherhood asked me to be a part of a local blogger get-together sponsored by Frito-Lay.  The focus was “perfect pairings” – of chips and dips.  Since my family already buys Frito-Lay’s Tostitos for gatherings at our home and I liked the challenge of creating my own dip, I signed on.  We entertain at our home several times a month. Tostitos chips are often part of the snacks. Both kids and adults enjoy dipping with them!

Last Wednesday, I met up with a few mom bloggers at Suzanne’s lovely home. We had a lovely time eating the various chips and dips that we had prepared.  Suzanne had also graciously made a ton of food (burgers, hot dogs, pasta, etc.) to go along with the chips and dip.  Lisa had prepared some tasty cupcakes to end our meal.  (I, on the other hand, just barely brought myself and my dip!)

mango peach salsa with a kick recipe

Mango peach salsa “with a kick”

When I was asked to make a salsa or dip, I immediately thought of a salsa that I had tasted at a recent theater opening.  I remember remarking to the hostess that the salsa was delicious.  “Oh, I bought it at Costco,” she admitted.  I was so surprised because it tasted homemade!  Anyway, I decided to try to recreate the Costco salsa at home.

Of course, the first thing that I did was do a search on google for “Costco Mango salsa”.  Santa Barbara Mango Peach Salsa popped up.  The Costco ingredients were Mango, (Filtered Water, Dried Mango), Tomatoes, Assorted Chiles and Peppers, Onions, Peaches, Evaporated Cane Juice, Tomato Paste, Cilantro, Apple Cider Vinegar, Lemon Juice, Spices, Salt and Garlic Powder.
