I have been feeling a bit nostalgic about food lately. As loved ones get older and pass away, I realize the important links that food brings to certain memories. Food connects us to special times and people. That is why it is good to share family recipes like the easy chicken stew recipe that I am sharing today.
I learned this chicken stew recipe from Reggie’s Aunt Bertha. It was her southern mom’s recipe, so I call it Grandma Julia’s Easy Chicken Stew. As many of you know, more mature generations don’t give exact ingredients so I had to play around in my kitchen a bit but this recipe is very close. As Aunty said,“I knew you could do it.” (So sweet!)
Here is what you need: three pounds of chicken wings (cut up with the tips discarded), two potatoes peeled and cubed, one can of drained green beans, four mini ears of corn, two big carrots – peeled and diced, one cup of frozen peas, four cloves of garlic diced, half a big onion chopped up, 28 ounces of crushed tomatoes, two cups of chicken broth, one tablespoon of seasoned salt, two teaspoons of black pepper and one teaspoon each of garlic powder, onion powder and paprika.
You just put everything in a big pot, stir it together and bring it to a boil. Then, cover the pot, lower the heat and let the stew cook on low for three hours. This easy chicken stew tastes great served right away but in my opinion, it is even better the next day.
