I am a bit of a Harry Potter fanatic. I have read all of the books and watched all of the movies many times over. I can barely wait to see the final installment of this epic series. In celebration of Harry Potter and the Deathly Hallows – Part 2 where ‘IT ALL ENDS’, I have decided to bake a few treats representing some of the popular items in the series. I start off with butterbeer cupcakes. Typically a drink in the film made with butterscotch and cream soda, I am turning it into a cupcake. I am also including an easy recipe for Harry Potter licorice wands. Enjoy!
Butterbeer Cupcakes with Vanilla Buttercream Frosting
Yield: 18 cupcakes
Ingredients
Cupcakes
- 2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 3 eggs
- 1 1/2 tsp vanilla
- 1/2 cup buttermilk
- 1/2 cup cream soda
- 3/4 cup butterscotch
Frosting
- 1 stick unsalted butter, room temperature
- 3 cups powdered sugar
- 1/4 cup milk
- 3/4 tsp vanilla
Cooking Directions
- For the cupcakes: Preheat oven to 350 degrees. Line muffin tins with paper baking cups
- Combine flour, baking powder, baking soda, and salt in a medium bowl. Set the bowl aside.
- In a large bowl beat the butter with an electric mixer on medium for about 30 seconds. Add the sugars and beat the mixture until it is well combined. With the mixer still on, add the eggs one at a time until it is combined with the sugars and butter and then add the vanilla to the mixture.
- Alternate adding the flour mixture, buttermilk and cream soda to the butter mixture while having the electric mixer on low speed. Begin and end with the flour mixture. Stir in the butterscotch.
- Fill the baking cups to 2/3 full and bake for about 18 minutes or until the tops of the cupcake spring back when lightly touched. Cool the muffin tins on a wire rack.
- For the vanilla buttercream frosting: Using the paddle attachment of your electric mixer, cream the butter in a large bowl until it is smooth (approximately 2 minutes).
- With the mixer on a low speed setting, slowly add 3 cups of sugar until it is fully mixed into the butter. Then add the milk and vanilla. Increase the mixer speed to medium high and beat the mixture until it is light and fluffy (3 – 4 minutes).
Harry Potter Licorice Wands
Yield: 20 -24 wands
Ingredients
- 20 – 24 licorice twists
- 1 cup white candy melts
- assorted sprinkles
Cooking Directions
- Place candy melts in a microwave bowl and heat for 1 minute, stirring every 15 seconds until the candy is melted.
- Dip half of each licorice twist into the candy coating and then dust each one with a light coating of sprinkles.
