I find it so interesting to hear the questions that people ask when they know that you work with food at any level. “How do I chop an onion?” is a common question. Questions like that are easier to show than to tell, so here is a short video of Top Chef contestant Ash Fulk demonstrating how to chop/dice an onion. I recorded the video at the media preview of the Cheeses of France pop-up café event that I attended last month.
In sum, he said, “Have a sharp knife” and “The shape tells you how to cut it/let the lines be your guide.” Personally, I learned how to chop onions while working at a Chinese restaurant as a teen. I would peel and chop buckets of onions each day at work! The best thing about that experience is that chopping regular onions don’t bother my eyes at all. (Red onions still make me “cry” though!)
