Bon Appétit magazine is one of my favorite cooking magazines. Andrew Knowlton’s “The Foodist” column is consistently my favorite part of the magazine. He is smart without being pretentious and I usually find myself agreeing with his food picks. I would say that he is currently one of my top 3 favorite food writers. That is why I was thrilled to learn that he was doing a “live” Q&A with Bon Appétit readers on their Facebook page. (This was not even a blogging related thing at all. Everybody was welcome to leave questions and comments.)

Kimberly Coleman What is your favorite quick & easy, kid-friendly recipe (if you have one…)? Thanks!
Andrew Knowlton It’s easy to get into the pasta for dinner rut with kids, just because it’s so quick and kids dig it. After several failed attempts, my oldest daughter has come around to frittatas (I just gotta make sure to put enough cheese in them). Also some sort of rice stir-fry with a bunch of veggies and a tablespoon or two of bacon seems to do the trick.
Kimberly Coleman Great, thanks. I’ll add the frittatas to the mix, since my kids aren’t big pasta fans. It will give me a break/mix things up from the protein-carb-veggie standards!
While I liked both of Mr. Knowlton’s suggestions, I think the rice stir-fry will work the best for my family. While, they will eat a quiche* on occasion, none of “my guys” are really big egg fans. If you have any other quick and easy, kid-friendly dinner recipes, I would love to hear about them. (Reggie, Michael and Sean are fine…I’m the one who constantly needs to change up things!)
